The Pedro Ximénez del Carlos is a very curious and original white wine, of very limited production, from a single vineyard of Pedro Ximénez, owned by Carlos Cubells. The estate is located in the municipality of Poboleda, on a hillside planted at 600 meters altitude, with an ideal exposure for the cultivation of low-yield vineyards. The production is very artisanal with a very quiet fermentation in 500-liter oak barrels and subsequent rest in barrels and Damajoana.
